When I was a kid, any parent who made these for room parties were superheroes. Seriously.
No kid could resist the allure of the wiggly, jiggly gelatin squares.
Some moms would cut the gelatin into shapes using cookie cutters. These babies had so much Gelatin in them that they would BOUNCE if you dropped them.
We used to try and suck them through our teeth, but the tensile strength of the square often proved to be difficult.
a rose by any other name
Gelatin squares have been called by many different names. Jello Jigglers, Finger Jello and Knox Blox. (My mom always called them Knox Blox) …whatever you call them, they will bring back memories!!
NOTE: If using a bulk KNOX gelatin instead of packets, it is 2 1/2 teaspoon equivalent.
INGREDIENTS
- 3 packages any flavored gelatin of your choice (3 oz each)
- 4 envelopes Knox gelatin (1/4 oz each) ** If using bulk use between 3 and 3 1/2 TBSP**
- 4 cups boiling water
DIRECTIONS
- combine all the gelatin in large bowl. (both flavored and unflavored)
- take 4 cups of boiling water and slowly pour into bowl, stirring well until all gelatin is completely dissolved. This step is important, otherwise you will have pockets of rubber.
- pour into a 9×13 pan and refrigerate several hours until firm
- cut into squares with a knife, or use cookie cutters to cut out shapes.
- eat with fingers!
bon appetit!
