THROWBACK RECIPE: Old Fashioned Potato Candy

2 words that don’t seem to be thrown about together. Potatoes and Candy. whaaaaaaattt????

What is Potato Candy?

This is a recipe that became really popular with southern cooks during the depression. Using limited items that were available and coming up with ingenious ways to keep their lives somewhat normal, brought the popularity of potato candy.

Powdered sugar was cheaper and easier to obtain than regular sugar, and potatoes were a common staple.

Add some peanut butter, use the jelly roll method and voila…an old fashioned candy made from mashed potatoes.

INGREDIENTS

  • 2-3 Medium sized potatoes
  • 1 1/2 – 2 pounds confectioners sugar
  • 1 tsp vanilla
  • 2 TBSP butter
  • peanut butter

DIRECTIONS

  • Bake potatoes. let cool. Peel and mash
  • add sugar , vanilla and butter, mixing well . Dough will be stiff, like playdough.
  • sprinkle counter or board or waxed paper with powdered sugar, then roll dough into a rectangle shape on top.
  • sprinkle rolled dough with powdered sugar, cover with waxed or parchment and flip over (this side will now be the bottom.
  • spread the top of your rolled potatoes with layer of peanut butter, about 1/4 inch thick.
  • take one side of the dough and roll tightly, like a jelly roll. (use the waxed or parchment paper to help get roll started and guide.)
  • refrigerate until firm.
  • cut into slices

refrigerate in an airtight container any leftovers.
