Throwback Recipe of the week: Carrot Casserole

Grandma Bea’s recipe box

This little wooden box is a treasure trove. A collection of all her recipes all written on little index cards ot typed out , tucked safely away in the wooden box grandpa made for her.

Her collection spans from the 40’s through the 90’s.

This gem was cut out from their church program, and was submitted by a woman named Dolly D.

DISCLAIMER: just because I post them doesn’t mean I like them. This is one of those recipes where I just kind of shake my head and say “I don’t know about that…”

My grandmother was a product of the depression era. Many of her recipes are simple and economical, so it makes perfect sense she would have clipped this one to add to her repertoire. It is a fixture in her box, which means she must have liked it well enough to keep it around!

INGREDIENTS

  • 4 CUPS SLICED CARROTS, COOKED
  • 1 CUP WATER CHESTNUTS, SLICED
  • 8OZ CAN MUSHROOMS
  • 8OZ SLIVERED ALMONDS
  • FRENCH FRIED ONIONS

RECIPE:

Mix carrots, water chestnuts, mushrooms and slivered almonds together. Place in a buttered casserole dish. top with french fried onions and bake at 350 degrees for 25-30 minutes.
