Throwback Recipe: Vintage Strawberry Preserves!

It’s Strawberry Time!

All around the country, many people are gearing up for strawberry season! What better way to use up those delicious beauties than making a batch of old fashioned Strawberry Preserves!

Becuase there is no pectin, these preserves are more of a runnier jam with chunks of luscious berry. All you need are some fresh strawberries, a bunch of sugar and some water and lemon juice!

This recipe makes 4 small jars. Recipe can be doubled.

ingredients

1 quart fresh strawberries, washed, stems removed and quartered

3 cups white sugar

1/4 cup water

2 TBSP Lemon Juice

DIRECTIONS

Take your quartered strawberries and mash using a potato masher. You want it to be a little chunky.

Add sugar and toss to coat. Now WALK AWAY for at least an hour. The longer they sit in the sugar, the more natural juices release.

After your time as passed, In a large saucepan bring the entire strawberry/sugar mixture to boil over medium heat. Stir frequently.

Once it comes to a boil, increase heat to medium high and boil another 5-7 minutes. stirring frequently.

Add water and lemon juice, continuing to stir.

Boil another 5 minutes.

pour into prepared jars and process via water bath.

if you choose not to process jars, the preserves have a fridge life of about a week to 10 days.
